zucchini, mint & feta fritters with chilli jam







makes: 10 fritters & 2 cups of chilli jam


ingredients


fritters


2 zucchinis

80g greek feta, crumbled

50g parmesan, grated

handful of mint, chopped

3 eggs

1 cup wholemeal flour

salt and pepper to taste

oil to fry


chilli jam


1 brown onion

5 long red chillies

2 red capsicum

1/2 cup apple cider vinegar

2 cups jam sugar


sour cream and coriander to serve


method


for the chilli jam, blitz the onion, deseeded capsicum and chillies in a blender until finely chopped. fry off the mixture in a hot pan until aromatic, around 5 minutes


stir the apple cider vinegar and jam sugar into the chilli mixture and simmer for 10 minutes


refrigerate jam and allow to set in a jar until needed


for the fritters, grate the zucchini then place it onto a tea towel and squeeze out any excess water. add the zucchini to a mixing bowl with the mint, feta, parmesan, eggs, flour, salt, pepper and stir until just combined


to a hot pan with a dash of oil add a generous spoonful of the mixture, fry on both sides for 3 minutes or until golden and cooked through


serve the fritters with the homemade chilli jam, a dollop of sour cream and coriander
