veal marsala

1/4 cup plain flour

4 thin slices of veal

2 small shallots, finely sliced

3 cloves garlic, crushed

10 cup mushrooms, sliced

3 tbsp parsley, chopped

1 tbsp thyme, finely chopped

1 tbsp rosemary, finely chopped

3/4 cup cream

3/4 cup marsala wine

3/4 cup beef stock

2 tbsp butter

salt and pepper


Coat veal in flour, salt, pepper. pan fry in olive oil for 25-30 seconds per side

Cover in foil and set aside

Sauté shallots, garlic and mushrooms in 1 tbsp of butter and splash of olive oil

Add marsala wine and cook down until reduced by around half

Add stock, thyme and rosemary and simmer for a further 5 minutes

Turn down the heat, add cream and cook until slightly thickened

Season well with salt and pepper and finish with 1 tbsp of butter

Return veal to the sauce to heat through

Scatter with chopped parsley and serve with potatoes and sautéed green beans
