the reuben

makes 4 sandwiches


1 loaf sourdough or rye bread

10 thin slices leg ham

4 pickles, sliced

4 slices swiss cheese

1/2 cup sauerkraut

2 tbsp butter

mayo dressing

1/2 cup mayonnaise

1 handful parsley

1/2 lemon juice

1/4 cup sour cream

1/2 red onion

1 pickle

salt and pepper to taste


add the mayo dressing ingredients to a blender and blitz until combined. you want the consistency to still be still slightly chunky

cut pickles length ways into four slices

take a tablespoon of the mayo dressing and spread it over a thick slice of sourdough. add a layer of sauerkraut, ham, swiss cheese, pickle and top with another slice of bread spread with the mayo. the sandwich should be stacked quite high

take half a tablespoon of butter and melt it in a hot pan. add the sandwich to the pan, i use a heavy pot to press the sandwich down as it cooks. fry for two minutes then flip over and cook for another two minutes until golden

serve with a sliced pickle
