strawberry + pistachio chocolate bark

290g white, dark or milk chocolate

2 tbsp goji berries

15g freeze dried strawberries, crushed

2 tbsp pistachios, chopped

1/4 cup coconut flakes


Heat baking melts over a double boiler until smooth. Alternatively you could use a microwave, stirring every 30 seconds until melted

Pour melted chocolate onto a lined baking tray. Smooth out using an offset spatula to your desired thickness, you want it to be thick enough to hold the toppings but thin enough to break easily once set

Top the melted layer of chocolate with goji berries, strawberries, coconut and pistachios

Allow to cool in the fridge for 10 minutes then break into pieces
