spiced pear & plum pie

everything about this spiced pear & plum pie makes me happy

the lattice crust, the soft spiced fruit filling and of course the house smelling like absolute heaven as it bakes

the process of making a lattice crust is super relaxing to me, but if you're not that way inclined and would rather bang on a square sheet of puff and tuck in the sides, no judgement here, it will still turn out as delicious and you can just tell people you've gone for the rustic look


2 pears, peeled, diced

4 plums, peeled, diced

1/3 cup brown sugar

2 tsp cinnamon

2 tsp allspice

2 sheets puff pastry

1 egg, whisked

2 tbsp water


preheat oven to 180 degrees

combine the fruit, spices and brown sugar in a pot on a medium heat

cook for 15 minutes until soft, stirring occasionally then transfer to a 25cm pie dish

cut the puff pastry into 2cm strips and top the pie with a lattice design

to make the puff plaits take 3 pieces of thinly cut puff pastry, pinch at the top and plait until you reach the end. make three of these then lay them around the edge of the pie and press down lightly

whisk the egg and water together and brush over the pastry. bake for 35 minutes until golden

best served straight from the oven with a big scoop of vanilla ice cream


there are so many easy to follow tutorials online on how to do a lattice crust, you'll get the idea of it after watching one

if your fruit isn't completely ripe its not the end of the world, i used barely ripe pears and plums for this recipe and nothing disastrous happened
