smokin' shrimp tacos

8 small flour tortillas

16 shrimp or king prawns, shelled + deveined

1/4 red cabbage, finely sliced

2 tbsp @mt_elephant ‘seriously smokin’ flavour sprinkles

4 tbsp @mt_elephant hemp + olive oil blend

1 corn on the cob, chopped

mango salsa

1 mango, diced

1/2 red onion, diced

1 avocado, diced

1 handful coriander, chopped + extra for serving

1/2 lime, juiced + 1/2 cut into wedges for serving

pinch of salt

lime crema

1 tbsp mayo

2 tbsp sour cream

1 lime, juiced

pinch of salt


add salsa ingredients to a bowl and allow to sit and infuse

whisk together lime crema ingredients and set aside

coat prawns in 2 tbsp of hemp + olive oil and 2 tbsp of seriously smokin’ flavour sprinkles

pan fry the prawns in the remaining oil until golden, around 2-3 minutes per side

remove prawns from the pan and toss corn through for 2 minutes

warm tortillas in a hot dry pan

arrange tacos starting with the red cabbage, salsa, prawns, corn, lime crema, coriander, lime and top with a sprinkle of seriously smokin’
