roasted cajun cauliflower salad with lemon tahini dressing

Ingredients


2 cauliflower, chopped into inch pieces

3 tbsp cajun seasoning

1 handful mint

2 tbsp pine nuts, toasted

olive oil, drizzle

good pinch of sea salt


Tahini dressing


3 tbsp tahini

1 lemon, juiced

2 cloves garlic, crushed

pinch of salt

1 tsp honey

4 tbsp hot water


To serve


chilli flakes

sea salt



Method


Preheat oven to 180 degrees


On a lined baking tray toss the cauliflower in olive oil, cajun spice and salt


Roast for 40 minutes then increase oven to 200 degrees for a further 5-10 minutes


For the dressing, combine ingredients and mix well


Top cauliflower with fresh mint, toasted pine nuts, chilli flakes, sea salt and a good drizzle of the tahini dressing
