whole orange + almond cake

My 'Juicy Fresh' Masterchef Season 13 Orange + Almond cake


6 eggs

2 large oranges

1 cup caster sugar

2 cups almond meal

2 teaspoons baking powder


Grease and line a 20cm cake tin

Boil whole oranges (skin on) in water for one hour until soft, once cooled blend until pureed

Preheat oven to 160 degrees

In a mixing bowl whisk together the eggs and sugar then stir through the orange puree

Add the baking powder and almond meal to the wet ingredients and stir until combined

Pour the mixture into a lined cake tin and top with flaked almonds. Bake for an hour and fifteen minutes or until a skewer comes out of the center clean

Decorate with candied or fresh orange and a dusting of icing sugar
