macadamia & white chocolate cookies

makes 15 large cookies

1 cup self raising flour

1/2 cup plain flour

150g butter

1/2 cup caster sugar

1 cup brown sugar

1 egg

1 tsp baking powder

1 tsp vanilla essence

1/2 cup white chocolate chopped

1/2 cup chopped macadamias


preheat oven to 170 degrees

line two baking trays with baking paper

combine the sugars and room temperature butter in mixer and blend until smooth

add in the egg and vanilla and blitz until combined

tip the mixture into a mixing bowl then sift over the flours and baking powder. stir in the flours until you form a dough then add the chopped nuts and chocolate using your hands to mix

press cookie dough into a ball, cover with cling film and refrigerate for 15 minutes

take around two tablespoons of the mixture and roll into a ball, place onto the baking tray and flatten slightly

bake cookies for 12 minutes then transfer to a wire rack to cool
