lemon & passionfruit shortbread


250g butter

1/2 caster sugar

3 1/2 cups flour

1 cup icing sugar

2 passion fruit

1 lemon juiced

1 teaspoon lemon zest


preheat oven to 160 degrees

in a blender blitz the butter, sugar and lemon zest until pale and creamy

slow the mixer down and gradually beat in the flour cup by cup. once your dough has started to form, turn out onto a board and press into a ball. cover in cling film and refrigerate for 30 minutes

roll the dough out to around 4mm. use a cookie cutter to cut the dough or a circular glass. set aside on a lined baking tray and refrigerate for 15 minutes before baking

bake the cookies for 12-15 minutes or until they start to get a little colour to them, you dont want them to brown. turn the cookies out onto a wire cooling rack and allow to fully cool before icing

in a bowl whisk together the icing sugar, lemon juice and passion fruit pulp

take a teaspoon full of the icing mixture and glaze the top of the cookies making sure there are a few seeds on top of each

place the cookies onto a wire rack and allow to cool before storing
