kaffir lime leaf ice cream

The ice cream you didn't know you needed in your life


2 cups thickened cream

1 cup milk

130g caster sugar

2 eggs

10 kaffir lime leaves


Slice kaffir lime leaves and transfer to a mortar and pestle

Grind to release aroma from the leaves

Add cream, milk and kaffir leaves to a saucepan and bring to just below a simmer. Remove from the heat and allow to infuse for 15 minutes

Place the egg and sugar into a bowl and whisk until combined and thickened

Strain the milk mixture into the egg mixture, whisking continuously

Push the lime leaves firmly into the sieve to make sure you get every last bit of flavour

Strain a second time through the sieve with the kaffir leaves to completely get all of the remaining flavour through

Transfer the mixture to a pot and return to the heat. Place over low-medium heat and stir until mixture thickens and reaches 83°C. Remove from the heat and transfer to a clean bowl over ice bath to chill

Churn in the ice cream machine according to manufacturer’s instructions and set aside in the freezer until required

Serve with toasted coconut and thinly sliced kaffir lime leaves
