edamame, soba + cucumber salad

1/4 wombok, finely shredded

1/2 cup edamame

1 lebanese cucumber, finely sliced

150g soba noodles, cooked

1 handful vietnamese mint


1/4 cup kewpie mayo

2 tbsp soy sauce

1 tsp brown sugar

1 tsp grated ginger

3 tbsp warm water


combine salad ingredients in a serving bowl

add dressing ingredients to a jar and shake to combine

refrigerate salad until ready to eat and dress prior to serving
