conchiglie alla vodka

ingredients


400g tinned plum tomatoes

500g conchiglie (shell) pasta

70g tomato paste

2 cloves garlic, crushed

1 shallot, sliced

4 tbsp, vodka

1/2 tbsp chilli flakes

3/4 cup thickened cream

1 tbsp sugar

2 tbsp butter

2 tbsp olive oil

1 handful basil, chopped

salt and pepper, to taste


method


in a pan on a medium heat sauté the garlic and shallot in oil until translucent and softened


pour in the vodka and cook off for a few minutes allowing the alcohol to evaporate


add in the tomato paste and cook until thickened and slightly darkened. pour in the plum tomatoes, chilli flakes, sugar, salt and pepper and simmer on a low-medium heat for 25 minutes


reduce the heat and pour in the cream, stir until combined then remove the pan from the heat and set aside


cook the conchiglie pasta in a well salted pot of boiling water


strain the sauce through a sieve and back into the pan. stir in the butter and keep on a low heat until serving


combine the pasta with the vodka sauce and top with fresh basil, burrata and more chilli flakes!



notes


seafood is a really delicious accompaniment to this dish. add a few grilled tiger prawns before serving to really take it to the next level


yes, you can make this pasta without the vodka and its still absolutely delicious!
