cinnamon donuts

makes: 26 donuts


3 cups plain flour

90g butter, melted

1/3 cup caster sugar

7g instant yeast

1 cup milk, warmed

2 eggs

canola oil to fry


3 tbsp cinnamon

1 cup caster sugar


in a large mixing bowl combine the flour, yeast and sugar

using a wooden spoon create a well in the centre and slowly incorporate the milk, eggs and butter

once the mixture becomes dough-like in texture turn it out onto a lightly floured surface and knead until smooth, this should only take a few minutes

place your dough into a well-greased bowl and cover with cling film. allow the dough to rise in a warm area for 1h 20 minutes or until the dough has doubled in size

once the dough has risen punch it down and roll it out with a rolling pin to about 1 inch in thickness. cut the dough with a donut cutter or whatever you have on hand you can improvise with (like a drinking glass and a bottle top)

transfer the cut donuts to a lined baking tray and allow them to sit for 5 minutes

combine the caster sugar and ground cinnamon on a separate plate

bring a pot of canola oil or flavourless oil to around 190 degrees, you can use one of the donut holes to test the oil. place your donuts into the oil using a slotted spoon. fry your donuts on each side for 30 seconds until both sides are golden and cooked through

transfer your cooked donuts to the plate with cinnamon sugar and dust on each side

eat immediately for the ultimate satisfaction!
