choc peanut protein bars

makes 8 bars

prep time: 20 minutes


ingredients


3 cups brown rice puffs

1 tsp vanilla essence

1 cup peanut butter

3/4 cup maple syrup

1/3 cup vanilla whey protein

1 1/2 cups organic dark choc chips

2 tbsp coconut oil

pinch of salt


method


melt the peanut butter, maple syrup and vanilla essence in a pot on a medium heat until smooth and combined


turn off the heat and stir in the protein powder and pinch of salt


in a large bowl add the brown rice puffs then pour over the peanut mixture using a wooden spoon to combine


spray a 30cm baking tray with cooking spray, tip the mixture into the tray and press down with the back of a metal spoon to flatten, don't press too hard or your bars will become dense


melt down the dark choc chips and coconut oil, you can do this on the stove or in the microwave. pour the chocolate over the rice puff mixture and smooth it out with a spoon


set the bars in the freezer for 20 minutes


once set, slice into bars and keep refrigerated until ready to eat
