cajun chicken caeser salad with homemade mayo

2 chicken breasts

1 avocado

2 heads of butter or cos lettuce

2 bacon rashers

1/2 loaf sour dough bread

2 tablespoons cajun spice

2 egg yolks

2 teaspoons vinegar

1 cup canola or flavourless oil

2 cloves garlic crushed

1 lime

salt and pepper to taste


preheat oven to 180 degrees

cut the chicken into strips, coat in olive oil and cajun spice and bake for 30 minutes or until golden

for the mayo, add the eggs yolks and vinegar to a blender and blitz until creamy. slowly add the oil in a thin and steady stream until the mayo becomes thick in consistency. stir through the garlic and lime juice by hand and season with salt and pepper

slice bacon into pieces and bake until crisp either in the oven or using a pan

for the croutons, tear apart sour dough into bite sized pieces and lightly drizzle with olive oil and salt. bake in the oven for 15 minutes until golden

roughly chop lettuce, slice the avocado and arrange on a serving plate

top the salad with the chicken strips, croutons, a scatter of bacon and top with a dollop of homemade mayo

an extra squeeze of lime over the salad never hurts either
