burrata, peach and prosciutto salad

my burrata, peach and prosciutto salad is the kind of side that has you questioning whether or not you even need the main dish at all


good quality fresh produce is truly what makes this salad, it really needs little in the way of dressing but if you do i recommend a drizzle of balsamic glaze



serves 2

prep time: 10 minutes


ingredients


2 figs, cut into halves

1 burrata, torn

2 ripe peaches, sliced

1 handful basil

50g san daniele prosciutto

1 tbsp olive oil

pepper, to taste


balsamic glaze


1/2 cup balsamic vinegar

3 tbsp caster sugar


method


arrange peaches, prosciutto, basil and figs on a serving plate


top with torn burrata, drizzled olive oil and freshly cracked pepper


for the glaze, combine the balsamic and sugar in a pan on a medium heat and simmer until thickened and reduced


top the salad with the balsamic glaze prior to serving
