broccoli, almond and cranberry salad

ingredients


1 head broccoli

½ cup slivered almonds

1 handful chopped mint

½ cup cranberries

2 finely chopped spring onions

1 heaped tbsp curry powder

6 tbsp raspberry vinegar

5 tbsp maple syrup


method


blanch the broccoli in boiling water for 4-5 minutes then strain and run it under cold water to stop it from cooking any further


for the dressing, combine maple syrup, raspberry vinegar and curry powder in a hot pan and heat until fragrant (about 2-3 minutes)


transfer the broccoli to a serving bowl, scatter with almonds, cranberries, chopped mint and spring onions. just prior to serving pour the cooled dressing over the salad and toss well


this is a perfect weeknight dinner served with your favorite protein but also delicious on its own!
