ricotta pancakes with caramelised banana

ingredients


250g ricotta

1 cup milk

1 tbsp lemon zest

1 mashed banana

1 cup self raising flour

2 eggs, separated

1/2 teaspoon vanilla extract

2 tbsp caster sugar

pinch of salt

maple syrup to serve


caramelised bananas


1 tbsp butter

2 bananas

4 tbsp caster sugar



method


in a bowl whisk the yolks, caster sugar, vanilla extract, milk, lemon zest and pinch of salt. stir through the mashed banana and ricotta


sift the flour over the wet ingredients and stir to combine. whisk the egg whites in a separate bowl until fluffy then gently fold them through the batter, taking care not to over mix


add a teaspoon of butter to a hot pan and cook the pancakes on each side for 3 minutes or until golden and cooked through


slice bananas length ways sprinkle with caster sugar, pan fry in butter until caramelised


top the ricotta pancakes with maple syrup and the two slices of caramelised banana
