healthy banana + blueberry bread

ingredients


3 eggs

3 overripe mashed bananas + 1 banana for decoration

1 tsp vanilla bean paste (or extract)

2 tsp cinnamon

1/3 cup maple syrup

1/2 cup blueberries

1 1/2 cup self raising flour

1 cup almond meal

11/2 tsp baking powder

1 1/3 cup milk


method


preheat the oven to 180 degrees


line your loaf tin with baking paper and cooking spray if needed


to a large mixing bowl add the flour, almond meal, baking powder, cinnamon and stir


in a seperate bowl whisk the eggs, milk, vanilla bean paste, maple syrup and stir through the mashed bananas


make a well in the centre of the dry ingredients and stir through the wet ingredients until combined


gently fold through the blueberries


pour the mixture into the lined tin, slice a banana length ways into 3 slices to decorate the top of the loaf


bake for 45 minutes or until a skewer comes out of the centre clean
