apple + berry crisp

this really is one of those recipes that instantly makes you feel cosy and content on the inside


bursting with blueberries and apple-y goodness this crisp is the perfect mid-week dessert or weekend breakfast treat


i also find this recipe super effective when my boyfriend decides he needs ''something sweet'' after dinner, its quick to whip up and stores really well in the freezer for months if need be


...and of course, if it survives that long




prep time: 20 minutes

cook time: 15 minutes

serves: 4


ingredients


4 granny smith apples, peeled, diced

250g blueberries

2 tbsp maple syrup

1 tsp cinnamon

1 tsp allspice

1 tsp nutmeg


topping


1/2 cup almond meal

1/2 cup oats

1/3 cup brown sugar

1/3 cup flaked almonds

80g unsalted butter, melted


ice cream of your choice, to serve


method


preheat oven to 180 degrees


in a mixing bowl combine the diced apples, blueberries, maple syrup and spices


transfer to a pot and cook on a medium heat for 10 minutes or until soft


in a separate bowl combine the topping ingredients


spoon the fruit mixture into ramekins and cover with the topping


bake for 15 minutes until golden on top


serve with ice cream or thick yoghurt


notes


for a dairy free crisp replace the same quantity of butter with coconut oil and ice cream with an alternative of your choice
